Our Story

It is in November 2018 that the adventure begins. Alexis and Laura meet and their passion for good food and catering brings them together immediately. They decide to embark on the creation of IMMERSION together! The objective is then to create a warm place in which we could meet every day of the week for brunch! The temple of brunch in a way ...


Alexis is 27 years old. Originally lawyer, passionate entrepreneur, he is someone who is organized but also a dreamer, creative and ambitious. He set up his first club at 21, a mobile application allowing traffic to be generated in bars. After several experiences in food tech, he decided to start the project that made him dream as a youngster: Open his own brand in the restaurant field.


Laura is 26 years old. Originally marketer and communicator, she launched her blog and Instagram account during her last year of study. Following a trip to Australia, she makes coffee shop and brunch her playground. Her goal? Go and conquer the best brunch in Paris and elsewhere! Three years later, she combines many hats: blogger, content creator, food photographer and community manager. All that was missing was a string to her bow: that of opening her own establishment and bringing together everything she had seen and eaten in the past 3 years!


A year goes by before they finally find the place of their dream at 8 rue Lucien Sampaix in the 10th arrondissement of Paris. But it is a few days before the opening, when the whole team is in ready that the global pandemic COVID-19 forces all restaurants to close their doors until further notice.


It is finally on May 1, 2020 , that Immersion “opens” its doors for the first time to the public! The team then consists of Alexis, Laura and their cheffe Emilie. The restaurant is open for delivery on delivery platforms and for takeaway from Thursday to Monday from 10 a.m. to 3 p.m.


This was only the beginning of a wonderful journey!
